Fried Eggs with Bacon and Ramps


Happy Weekend! I found my happy place this morning with a bike ride to the farmers’ market on the square, a chocolate croissant from Graze, and a plate of fried eggs with bacon and ramps back home.

Fried Eggs with Bacon and Ramps (adapted from Serious Eats, makes 2 servings)

6 slices of bacon, but into 1-inch pieces
1 tablespoon butter
8 ramps, washed and ends trimmed
Kosher salt and freshly ground black pepper
4 large eggs
Red chili flakes

Fry bacon in a skillet over medium heat and cook, stirring occasionally, until bacon is crisp. Transfer bacon to a small bowl, but leave bacon fat in the skillet.

Add butter to bacon fat and heat until foaming has subsided and butter begins to brown. Add ramps and cook, stirring occasionally, until well browned. Season to taste with salt and pepper and reserve.

Crack eggs directly into skillet and fry until whites are set on top but yolk is still runny, about 2 minutes. Transfer eggs to a plate, season to taste with salt, pepper and chili flakes, and serve with bacon and ramps.
