Caprese Salad

DSC07390One of my favorite dishes this time of year is a simple Caprese salad made with sliced tomatoes, fresh mozzarella, basil leaves, olive oil, salt and pepper, and a drizzle of reduced balsamic vinaigrette. Apparently the salad is meant to represent the colors of the Italian flag.

I like to use ingredients fresh from the garden or farmers’ market. One of the vendors that sells tomatoes this time of year at the Dane County farmers’ market has a sign that says, “treat me like a tomato, not one of those red, store-bought things.” Which is so true. Most grocery store tomatoes are so disappointing. It’s one ingredient I always try to eat in season. I’m also quite fond of the fresh mozzarella from Farmer John, who sells at a variety of markets across the Madison area—although his mozzarella is not available at the downtown market. I recently loaded up on fresh mozzarella at the Monona farmers’ market.

It’s a beautiful, flavorful salad that celebrates the bounty of summer produce at its finest.
