Vegetable Pot Pie Skillet With Cheddar Biscuit Topping, Budget Bytes 

Just before the holidays, I was craving chicken pot pie—but a quick and easy version I could make after work on a weeknight. I started with a recipe for Vegetable Pot Pie Skillet from Budget Bytes (one of my favorite sources for quick, budget-conscious weeknight meals), and added a cup of rotisserie chicken I had on hand from a meal the previous night and swapped out the vegetable broth for chicken broth. It was the ultimate comfort meal (I couldn’t get enough of the cheddar biscuit topping) and I really liked how everything was confined to just one skillet.

I love a good Friday fish fry, but I was inspired to try a baked version after seeing this recipe on a list of 50 Most Popular Recipes of 2016 from The New York Times. Not only is baking fish and chips easier and less messy than frying, argues recipe author Melissa Clark, “it also has the distinct advantage of allowing you to cook both fish and potatoes at the same time in your oven.” The fish was great—I loved the light breading with panko crumbs, thyme and dijon—and the french fries (“chips”) were also a nice and easy addition to the meal, but it was the horseradish tartar sauce that really stole my heart. I could have eaten it by the spoonful.

This year a friend asked me to bring dessert to a small New Year’s gathering. I considered fondue, but taking that dog and pony show on the road seemed like too big of a hassle. Eventually, I settled on a classic—luxuriously rich chocolate silk pie. Surrounded by babies and toddlers, and their weary parents, for one moment the demands of parenthood seemed to disappear as I lost myself in that first creamy bite of chocolate bliss.
